1/2 c Swiss cheese; grated
1/3 c Cheddar cheese; grated
2 Eggs; beaten
1 ts Basil
Salt & pepper
1 1/2 c Zucchini; up to 2 c, chopped
1/4 c Onion; chopped
Buttered bread crumbs
Add cheeses to eggs and seasonings. Steam zucchini and onion until
soft; drain and mash. Combine with egg mixture in a 1 qt greased
casserole dish. Bake for 30 minutes at 325?F.
Note:
To decrease the consistency, add 1/3 cup crushed crackers.
