    Best Zucchini Bread

    4 lg Eggs
    3/4 c Oil
    1 ts Salt
    1 ts Baking powder
    1 1/2 ts Vanilla
    1 1/2 c Sugar
    3 c Flour
    1 ts Baking soda
    1 ts Cinnamon
    2 c Zucchini -- grated
    1 c Walnuts or pecans -- chopped

    Preheat oven to 350?F. Generously grease and flour 9x5" loaf pan,
    or spray with nonstick cooking spray.

    Stir together eggs, oil, salt, baking powder,vanilla, sugar, flour,
    baking soda, and cinnamon. Batter is very thick. Add zucchini. Fold
    in walnuts. Spoon into prepared pan. Bake for 1-1/4 hours or until
    done.

    Yield: 9 Servings
